Christmas shortbread decorated with icing

These pearly treats are true gourmet jewels. With pretty star-shaped cookie cutters, make magical pastel shortbreads, perfect for composing plate gifts.


For shortbread:

200 g softened butter

150 g sugar

2 teaspoons of vanilla extract

1 egg

300 g flour

For the frosting:

300g icing sugar

1 egg white

1 teaspoon lemon juice

Food coloring (pink and green)

Pearl of golden or silver sugar (Cultura)

Cookie cutters (Sibo Sibon)

The shortbread recipe

Step 1

In a large bowl, combine the butter and sugar using an electric mixer. Add the vanilla extract, the egg and then the flour. And form a ball of dough. Wrap it in cling film and let it cool for at least 15 minutes. If it stays cool for an hour, the dough will be better bound, but you will have to take it out of the fridge a few minutes before working to make it soften. Preheat the oven to 175 ° C.

2nd step

Prepare two baking sheets by covering them with parchment paper. On a floured work surface, roll out the dough to 1 cm thick. Cut out the cookies using a cookie cutter. Place them on the baking sheets and cook for 8 minutes.

Stage 3

Take them out of the oven and let them sit for 5 minutes before transferring them to a rack so that they cool completely.

The decoration

Prepare two icings by mixing icing sugar with an egg white and lemon juice. Add a few drops of pink dye in one and green in the other. Spread them in a thick layer on the cookies and decorate them with a pearl of golden or silver sugar.
