Delicious saffron cupcake

True stars of girly snacks, cupcakes combine creativity and indulgence. A pleasure that we do not sulk, especially in this saffron version.

The cupcake recipe

For cupcakes:

125 g flour

200 g sugar

3 eggs

100 g butter

1 sachet of baking powder

For the topping:

200 g mascarpone

1 tsp. liquid cream

3 saffron pistils

30 g sugar

Step 1

The day before, cool the cream in the microwave with the saffron, mix, and refrigerate for 1 night. The same day, preheat your oven to 180 ° C (th. 6). Whisk the eggs and sugar until the mixture turns white. Add the flour and baking powder, mix well. Add the very soft butter, and mix until you get a very homogeneous paste.

2nd step

Pour this dough into cupcake molds, fill only halfway up. Bake for 20 minutes, then remove from the oven and let cool in the molds.

Stage 3

Whip the saffron cream, icing sugar and masacarpone. Spread this frosting on the cupcakes with a spoon, or make rosettes using a fluted pastry bag. Decorate flowers with sugar (different models on the site)
