Fried sea bream with basil

We revisit the fried sea bream by adding delicate Thai notes, original and tasty.

2 sea bream of 600 g

2 carrots

1/2 green papaya

4 garlic cloves

3 shallots

75 g peanuts

2 sprigs of basil

2 limes

3 tsp. fish sauce

1 small fresh red pepper

1 tsp. 1 teaspoon brown sugar

peanut oil

salt pepper


Step 1

Grate the papaya and finely chop the carrots. Brown the peanuts in the pan for 3 min. Crush them. On a dish, harmoniously arrange the carrot, papaya, leafless basil. In a bowl, mix the lemon juice, fish sauce, sugar, chopped chilli and 1 clove of pressed garlic.

2nd step

With the tip of a knife, make grid incisions on both sides of the sea bream. Pour a good inch of oil into a large frying pan. Salt and pepper the fish, place them in hot oil and fry for about 10 minutes on each side.

Stage 3

In a saucepan, heat 1 cm of oil and fry the chopped shallots and garlic. Drain on paper towels.

Step 4

Drain the sea bream well and place them on the salad dish. Sprinkle with fried shallots and garlic and peanuts. Serve hot with the sauce.
