In addition to decorating your skewers, it will be the best ally of your fries, will slip easily into your burgers, and will be the key ingredient of the cocktail sauce (ketchup + mayo) ... So, what we wait ?
The recipe for homemade ketchup (for 1 pot):
- 1 chopped onion
- 1 clove of peeled garlic
- 15 g fresh grated ginger
- 600 g diced tomato pulp
- 12 cl wine vinegar
- 100 g sugar
- ½ tsp. 4 tsp spices
- Combine the chopped onion, peeled garlic clove, grated fresh ginger and diced tomato pulp in a non-stick skillet. Melt 20 min over low heat, turning.
- Mix then filter the puree obtained in a stainless pan.
- Add the wine vinegar, sugar, ½ tsp. 4-spices and 2 pinches of salt. Cook 45 min over low heat, turning often, to obtain a syrupy sauce.
The conservation tip: double the quantities and keep the preparation in the freezer (in small portions in ice cube trays).
