Lamb shoulder with hay

  • 1 boneless lamb shoulder
  • 2 large handfuls of hay (in pet stores)
  • 1 carrot
  • 1 onion
  • 6 garlic cloves
  • 3 tsp. olive oil
  • Salt pepper

1) In a cast iron casserole, brown the shoulder of salted and peppery lamb in hot oil for 10 min. Add the diced carrot and the chopped onion all around. Let caramelize a little.

2) Slide the peeled cloves of garlic inside the meat. Quickly rinse the hay, drain it and place it on the meat. Cover. Bake 3 to 4 hours in the oven, preheated to 150 ° C (th. 5). Check from time to time that there is a base of juice. If necessary add 1/2 glass of water.

3) Serve hot with quartered potatoes, baked for 1 hour in the oven with a little olive oil and fleur de sel.
