2 gray sea bream flaked and emptied
3 cloves of garlic
2 sprigs of thyme
1 bay leaf
15 cl of olive oil
8 cl white wine vinegar
Rinse and dry the sea bream. Brown them in a pan in 3 tbsp. hot oil. Reserve them in a dish just at their size.
With a vegetable peeler, cut a 5 cm ribbon of orange peel.
In the same pan, heat 2 tbsp. of oil, melt the chopped shallots and garlic. Add the vinegar, orange peel, thyme and bay leaf. Salt and pepper. Pour the rest of the oil and simmer for 10 seconds.
Coat the sea bream with this boiling sauce. Serve warm.
