Small, easy meringues

ingredients

2 egg whites

50 g icing sugar


90g caster sugar

1 sachet of vanilla sugar

1 tsp. 1 tsp lemon juice


Production

Step 1

Preheat the oven on th 3/4 (110 ° C). Mix the 3 sugars. In a salad bowl, beat the egg whites until stiff with the lemon juice. Pour the sugars in the rain without stopping whipping until the whites are firm and shiny.

2nd step

Put the preparation in a fluted piping bag and form the small meringues on a baking sheet lined with parchment paper. Put in the oven and cook for 1 hour 15. Let them cool completely.

The mini-meringues can be stored for a few days in a tightly closed airtight container. You can also prepare them longer in advance and place the box in the freezer.
